Lemon verbena is one of my favorite plants to have in the garden. It’s a shrub with simple, bright green leaves and a heavenly scent of lemon drops. It can be pruned up to make a small tree, and it is winter deciduous, so you can only enjoy this herb in spring and summer. The leaves infuse perfectly into cream, make a lovely bundt cake and a soothing cup of tea, but my favorite way to use lemon verbena is in a simple syrup with white wine over fresh summer fruit.
1 cup water
1 cup dry white wine
1/3 cup sugar
dissolve sugar in wine and water then reduce to one cup.
Perfect with white peaches, raspberries and figs.
A note on figs: Most figs in our areas will give two crops a season, one in late spring and then again in late summer. The birds are more trouble in spring, so hanging CD’s from the branches can help to deter them. Wait until the figs are swelling to pick, but get out first thing in the morning before the birds wake up.

I promise, once a month you will have a do it yourself DELISH treat. It’s just that in summer months I tend to eat a lot of salad and fruit, a bit boring to post about, and I will spare you. I cook less and snack more. I will write soon about why we all crave less food in the summer (hint: has to do with the heat). I will be writing/posting of course…. that never ends :)
